After an initial fermentation in vats, the wine is bottled with a liqueur de tirage, triggering a second fermentation that creates the natural effervescence . This meticulous process results in a perfect balance between freshness and aromatic complexity.

Patient breeding for optimal quality

Each bottle then rests on its lees for at least 12 months, allowing the aromas to fully develop. This cellar maturation gives our wines their aromatic complexity and inimitable freshness. Our cellars, with their ideal humidity and temperature conditions, ensure a harmonious evolution of the wine until it is tasted.
